FAB Foods for the Week: 5/26 – 5/31

I forgot to mention this in last week’s recap, but just wanted to share highlights from our Sunday night Memorial Day BBQ at our friends’ house:

Tuesday night I did some grocery shopping and met a friend for dinner at The Good Earth:

I sometimes forget about how good The Good Earth is. My favorite thing is to try one of their many fresh juices while I’m there. This time I tried the pineapple/ginger juice. I had the chopped salad for my entree and a gluten free peanut butter cookie. And I don’t know why I am making that face. I didn’t break my teeth when biting into the cookie — even though it appears this way.

Wednesday night the hubby and I went out to the Chatterbox Pub because I had a Groupon that was expiring. I decided against the mushroom blue cheese burger with fries and ordered the Sicilian Salad instead. Not the healthiest salad option, but I knew it was a good choice since I ordered it the last time I was at Chatterbox with Erin, KJ and Kristin.

My breakfasts this week looked like this:

Oh, and then this happened on Thursday night:

I hardly have any words. From start to finish, it was one of the most delightful meals I’ve had in a long time. Starting in the upper left and going clockwise: crab dip, hand cut pasta, rocky road and blueberry pretzel desserts. We also got the Brussels (which I’ve had before) and I had a bite of my friend’s fried chicken (I’ve also had that before). Parka — you have yet to disappoint.

Friday night’s dinner — finally a homemade meal!

Paleo broccoli fritters – I used the shredder attachment on the food processor for the first time. I’m embarrassed to say that I not only had to consult the user manual but I also may have watched a YouTube video to figure out how to use it.

Erin’s coconut rice – making this with low fat coconut milk doesn’t even compare to the full fat stuff. Lesson learned.

Baked portabella eggs — Turned out GREAT! I have a tendency to let them bake just a touch too long and the yolk gets hard, but these were almost perfect.

We also had some avocado on the side and I doused drizzled some sriracha on the fritters.

Tonight the hubby is making me a pre-race meal! I’ve requested mushroom stroganoff.

Oh, and I’m happy to say that I brought my lunch Tuesday, Wednesday and Thursday this week! I had the same lunches as last week: Wasa crackers, deli meat and hummus. My snacks rotated among Trader Joe’s Pretzel Slims, Chobani Flips (I tried the Vanilla and Strwaberry flavors!) and delicious Bartlett pears. On Friday I didn’t pack a lunch because my boss won a free 20-person taco bar from Qdoba! #amazing

Next week my goal is to definitely go out to eat less, pack my lunch at least four out of the five days of the week and start cutting back on wheat, dairy and sugar.

  1. I’ve never been to Parka before, but I think I’ll have to add it to my list of places to go! My husband and I tried to go to Ward 6 last night but it was busy and I was too hungry to wait! I think 90% of my lunches are the same- Amy’s Organic Southwest burrito, carrots, and cucumbers. But my workplace cafeteria is being remodeled so there are food trucks on site every day…that has been cutting into my normal routine!

    1. Ooo I’ve been wanting to go to Ward 6! When you go, you’ll have to let me know how it is.

      And I think we just might have the same employer 🙂

  2. Parka looks amazing! I may just have to fly KLM/Delta on my next trip home for the stop in MSP and you taking me to Parka for dinner 😉

    My lunches lately are leftovers from the night before (chicken stir fry with quinoa, or chickpea tomato sauce with wholewhat spaghetti, arugula and feta), or vegetable sandwich made of multigrain bread, feta, tomato, red onion, cucumber, lettuce and mashed avocado as my sauce. LOVE IT ALL!

      Mmm, I do love leftovers for lunch! And that veggie sandwich sounds delicious as well!

  3. Parka’s coffee is outta this world; dinner there looks the same! YUM. And, my mouth is watering for some pineapple + ginger juice 🙂

    My go-to lunch lately: spinach + kale salad with cuke, avocado, tomato, two scrambled eggs (or leftover protein from dinner the prior night), slivered almonds, sometimes coconut rice and a drizzle of EVOO.
